Recipe - Vanilla Cupcakes

These cupcakes are really easy to make and taste great. I either bake these in the oven or, if I'm not putting the oven on to cook anything else, I cook them in my cupcake maker as I find they cook quicker in there, so it saves on electric too!

If you want to make a bigger batch, simply double the amount of ingredients.

Makes: 7

Ingredients:

Cake
4oz/100g butter
4oz/100g caster sugar
2 eggs
4oz/100g self-raising flour
1/2 tsp vanilla essence
1/2 tsp baking powder

Butter icing
3oz/75g butter
6oz/175g icing sugar
1/2 tsp vanilla essence
Chocolate chips to decorate

Method:

1) Preheat the oven to 200 degrees C/ Gas mark 5.

2) Put the butter and sugar into mixing bowl and mix together.

3) Add the eggs and mix together

4) Add a third of the flour and mix together, add another third while continuing to mix, then add the final third of flour until all mixed.

5) Add the vanilla essence and baking powder and mix together.

6) Line a muffin tray with bun cases and spoon the mixture into the cases.

7) Bake for 15-20 minutes until a skewer comes out clean when inserted into the middle of each cupcake.

8) Leave to cool on a baking tray.

9)  Meanwhile, make the topping by adding all ingredients into a bowl or jug and whisking together until smooth and creamy.

10) When the cakes are cool, fill a piping bag with the butter icing, select piping nozzle and decorate each cake.

11) Top with chocolate chips or any other topping that you like.
